Summer Raspberry Salad

On a warm day like today, there is really nothing better than a refreshing salad–especially one that has raspberries in it! This salad is a personal favorite of mine and I make it with special spiced pecan nuts (every recipe has a secret, right?). Summer Raspberry Salad:

A mixture of red leaf and spring mix

Thinly sliced red onion


Goat Cheese

Spiced Nuts (recipe below)

Raspberry vinaigrette dressing (recipe below)

It’s up to you, depending on what you like, of how much of each ingredient you want to toss into your summer salad.


Spiced Nuts Recipe:

2 tlbs melted butter

2 tlbs sugar

1 tsp seasoned salt

1/2 tsp garlic salt

1/8 tsp cayenne pepper

2 cups chopped (or whole) walnuts/pecans/almonds

Preheat oven to 350° and bake for 10-15 minutes

After nuts are cool, toss with another 2 tlbs sugar


Raspberry Vinaigrette:

1 cup vegetable or Canola oil

1/2 cup raspberry vinegar

1/2 cup sugar

2 tsp Dijon mustard

1/2 cup poppy seeds
